Valentine’s Day is next week. So, make some plans for a romantic evening, make treats for the kids' class parties, or just use it as an excuse to make a sweet treat for yourself.
But, if you're a mom like me and have been asked to help out with the class Valentine’s Day party, you're probably trying to come up with a fun and simple treat to make. This week, I have a fun one. So, skip the cookies and the store bought cupcakes and let's make some Whoopie Pies!
This is a great recipe too. While most recipes for Whoopie Pies have you make your 'pie' from scratch, this one uses a cake mix, which really helps quickens the pace. And to jazz it up a bit, roll the assembled pies like a wheel on a plate of red sprinkles. The sprinkles with stick to the filling and make them look pretty darn cute!

CHOCOLATE WHOOPIE PIES
Total Time: 45 minutes Serves: 4
Ingredients
Pies
- 1 box of chocolate cake mix
- 3 eggs
- 1/2 cup water
- 1/2 cup oil
Marshmallow Filling
- 1-1/2 sticks butter, softened
- 1-1/3 cups Marshmallow Fluff
- 3/4 cup powdered sugar
- 1/4 cup cream cheese, softened
- 1-1/2 teaspoons vanilla
- 1/4 teaspoon salt
Directions
- Preheat oven to 400
- Line a baking sheet with parchment paper
- In a large bowl beat all pie ingredients until combined.
- Drop by 2 tablespoonfuls onto cookie sheets, 2 inches apart
- Bake 8-10 minutes, until puffed and toothpick inserted in center comes out clean
- Cool on baking sheet until completely cool
- In another bowl, beat butter, marshmallow, powdered sugar, cream cheese, vanilla, and salt until smooth.
- Arrange half the pies, flat side up, on clean surface
- Mound about 2 tablespoons of marshmallow filling in the center of each pie.
- Top with remaining pies, rounded side up.
- Chill until ready to serve.
- To decorate for Valentines Day, roll the edges of the marshmallow cream in red sprinkles.
