Candy Pecans

Shopping List:

  • 2 tablespoons Butter
  • 1 cup Pecan Halves
  • 2 tablespoons Brown Sugar

Instructions:

  • Melt the butter in a small saucepan. Once melted, add the pecans until all coated with the butter
  • Add the brown sugar and continue stirring
  • The sugar will start to caramelize in about 3-5 minutes
  • Remove and let cool on a lined cookie sheet

Spinach Salad with Fruit

Shopping List:

For the dressing:

  • 2 cloves Garlic, minced
  • 1/3 cup Olive Oil
  • 1/3 cup White Wine Vinegar
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt
  • Pepper to taste

For the salad:

  • Spinach
  • Pineapple, cut into chunks
  • Strawberries
  • Mandarin Oranges
  • Feta Cheese

Instructions:

  • In a mason jar, combine all of the dressing ingredients and shake, set aside
  • In a large bowl, add spinach, pineapple, strawberries, oranges and feta cheese
  • Sprinkle the pecans on top and serve with dressing

 

Grilled Shrimp and Pineapple Skewers

Shopping List:

  • Shrimp, peeled and deveined
  • 1/2 cup Jerk Marinade
  • 2 slices Fresh Pineapple
  • Skewers

Instructions:

  • Marinate the shrimp in the jerk marinade for at least 20 minutes
  • Skewer the shrimp and pineapple and grill over a medium-high heat until cooked (about 2-3 minutes per side)

Grilled Pineapple with Cinnamon Honey

Shopping List:

  • 1/2 cup Honey
  • 1 teaspoon Cinnamon
  • Pineapple slices

Instructions:

  • Grill pineapple slices over medium heat for 5-10 minutes
  • Mix together the honey and cinnamon
  • Once the pineapple is done, drizzle the honey cinnamon mixture over the top and serve

Chocolate Cupcakes with Pink Frosting

Shopping List:

  • 1 cup All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 stick Unsalted Butter, softened
  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1/2 cup Milk
  • 1/4 cup Sour Cream
  • Buttercream Frosting
  • Red Food Coloring

Instructions

  • Preheat oven to 350°
  • Line muffin tins with cupcake liners
  • Sift together the flour, cocoa powder, baking powder, baking soda and salt, set aside
  • In a separate bowl, beat the butter, brown sugar and sugar with a hand mixer until fluffy
  • Mix in the eggs one at a time then add the vanilla extract
  • Add the milk and sour cream and continue to mix until fluffy
  • Add the dry ingredients to the wet and mix together
  • Scoop the batter into the cupcake liners about halfway full
  • Bake for 15-18 minutes or until the toothpick comes out clean
  • Allow to cool before adding the icing
  • In a bowl, add the icing and a few drops of food coloring, mix completely
  • Add to a Ziploc bag and snip the corner and decorate the cupcakes
